PEANUT BUTTER COOKIES
1/2 C butter
1/2 C peanut butter (I use creamy but you could use chunky)
1/2 C granulated sugar
1/2 C brown sugar
1 egg
1/2 teaspoon vanilla
1 1/4 C all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
Thoroughly cream butter, peanut butter, sugars, egg, and vanilla. Sift together the dry ingredients and blend into creamed mixture. Shape into 1 inch balls and roll in granulated sugar. Place 2 inches apart on ungreased baking sheet. (I use parchment paper on my cookie sheets and that way I just have to wipe them off and put them away when I'm done, no scrubbing involved!) Criss-cross the cookies with fork tines dipped in the sugar so they won't stick. Bake at 375 degrees F for 10-12 minutes. Cool slightly and remove from pan. Makes 4 dozen.
I bake mine a little bit longer as I like mine browner. I am definitely a crispy cookie kind of gal!
See what I mean about baking mine longer....those are PERFECT for me! LOL!
