It was a nice day to stay inside and I washed my hair and called my doctor about my appointment on the 19th. We're going to have a telemedicine appointment! Yay! I don't have to drive for 1 1/2 hours when I'm not even sick! So happy about that because I have remained healthy and I want to stay that way! I started a new book...........book 5 of the series but I ordered the beginning one along with a few others from Thrift Books. If you want a good laugh these books will do it! It is a mystery series about 2 sisters that live in Alabama. They are a hoot and just the thing to lift your spirits when things get a bit much! This is book #5 and called Murder Gets a Life by Anne George. I love it!
I made my favorite summer salad. Meditteranean Salad; no lettuce but so delicious, refreshing, and healthy too!
This recipe came from an Australian blogger so capsicum is pepper and I just used lemon juice and regular olive oil and regular feta cheese. Enjoy!

Corn, Cucumber and Capsicum Salsa
2 corn cobs
1 red capsicum finely diced
1 cucumber skin on, finely diced
1 red or brown onion finely diced
Juice of 1 lemon
Good slug of lemon infused olive oil ( I use Cobram Estate)
Good handful of Danish feta ( I use Mayer Brand)
Herb of your choice say coriander, parsley or chives.
Boil a small pot of water and cook corn for about 8 minutes. Use a knife to remove the kernels.
Combine all the vegetables in a bowl
Dress with lemon juice and olive oil.
Mix herb/s through the salsa
Sprinkle Danish feta over the top.
Eat as much of this as you like and serve with lean protein for a yummy dinner.

I am looking up those books right now! Have you ever read the Mahalia Watkins books by A. L. Herbert? They are a riot, too! Murder with Fried Chicken and Waffles, Murder with Macaroni and Cheese, Murder with Collard Greens and Hot Sauce. They are fairly recent so you might have to check at the library, but thrift books might have some. Your salad looks perfect for a hot humid day.

ReplyDeleteYes, we had flash flood warnings and river flood warnings but not near me thank goodness. It runs to the lake and the lake has a spillway so i think I'm okay here but I wouldn't go driving around! LOL!
