I am making eggplant parmesan...one of my all-time favorite meals. I just finished roasting the eggplant.
Now I need to go put it all together so I have something to eat tonight!

Fatigue is not from old age.....the heat and humidity is just zapping you. You do quite a bit each day. Even though you don't think so. Enjoy your dinner. I too like eggplant parmesan....hubby, not so much.

I can't do that anymore....and a few other things too but I am healthy and still pretty strong so I can't complain.
