Sweet deliverance!

Well, Nitty woke up this morning and went outside, drank a bunch of water and ate all her breakfast!  We live to fight another day!  It made me happy and motivated to get a few things done.....a little cleaning and some baking!
I'm always looking for 'crispy' cookie recipes and I found a great one today!  From The Kitchen Magpie and she even explained what makes crispy cookies and what doesn't so I learned something.
These are super crispy and delicious...of course I had to try them....warm...fresh out of the oven.  It was a great day for baking and being in the kitchen because it rained most of the day and it's still raining.  No watering!  Yay!
These are crispy chocolate chip cookies like I remember them when I was growing up. Then something changed in the recipes and they started getting 'soft'.  This recipe solves that!
You drop them by teaspoonful and then dip a flat bottomed glass in water and flatten them.  The water keeps the glass from sticking to the cookie.  Who knew?  I always dipped the glass in sugar.  Another lesson learned.
If you lived next door I would call you over for some tea and warm, out of the oven, 'crispy' chocolate chip cookies!
I made another batch of my Mediterranean salad....I love it and it is really good for you.  The gal that I got the recipe from, a blogger in Australia, she ate this to lose weight and she did!  This may be my summer diet food!  My grand kids love it too.  Cuke, cooked corn off the cob, red onion, red or orange pepper, lemon juice, olive oil and feta cheese.........yummo!  You can add whatever spices you like...I add fresh parsley, cardamon and salt and pepper.  You could add other veggies too.

I made a scrubbie last night out of the yarn I picked up at Walmart.  One of the gals that sent me a bunch of supplies for Stitch Mania asked if she could pay me to make some for her.  In thanking her for all the supplies, I sent her a little scrubbie in the mail and she loved it!  I said she couldn't pay me but I would make her some more.  She likes blue and purple so this is the blue.  I'll pick up some purple yarn next time.  I like the variegation and it has a turquoise and a royal blue with white. 

 I also picked up this yesterday at Wally World.........I love butter but I searched for the best tasting butter flavored healthy spread and this is what popped up in 1st place.  By gum it does taste like butter!  I used it on my french toast this morning and in the cookies.....you could have fooled me!
I also got some of that butter flavored spray to put on my popcorn.  Trying to eat as healthy as possible but I don't like sacrificing flavor.  I also got a sugar substitute but haven't used it yet.  I'll let you know!

I hope everyone is staying dry!  I had to go out in the rain to harvest some herbs for my salad but just on the front porch....I made it easy on myself for just such occasions! LOL!

  2. Yay for Nitty! What a relief. I'm glad you got a cookie recipe you like. I prefer soft cookies but everyone has their own preference.
    Your scrubbies are turnig out wonderful! I need to find a good recipe for the round ones. Probably a lot on Ravelry if I would just take the time to look. We used the Earth Balance spread for awhile but Dennis likes the spreadability of Yogurt Butter. I get it in a tub at Walmart. I really is good and is fairly healthy for you. Of course, every day a new "expert" changes what is healthy and what isn't!

    1. I use the Red Heart flat round scrubbie pattern that Connie (Far Side of Fifty) recommended. It's on their website. I had tried several other patterns and had problems so I'm sticking to this one! It's not the easiest yarn to work with so you need a simple pattern IMHO.
      I'm trying to stay dairy free as much as possible but I do cheat with cheese!LOL! You're so right about the 'experts'.....some of the 'healthy' substitutes are full of chemicals which are not healthy!

  3. Those cookies look great. I had the intention of baking cookies the other day, and got side tracked like always. I've not seen that scrubby yarn in stores, but it would be much easier to use than cutting 10 yards of nylon netting. I'll have to look into that yarn.

    1. Walmart has it and read my comment above about the pattern. I know...I have netting I bought that I've yet to use for that exact same purpose. The scrubbie yarn was only $2.50 and I've made 4 scrubbies and there is more than 1/2 a skein left. Good luck!

  4. That's great news about Nitty! As far as butter, I'm afraid I've gone over to the saturated fat side after reading Sally Fallon's Nourishing Traditions. The science and research behind it makes a lot of sense. For sugar, I'm trying coconut sugar. A little pricey, but I figure to stay within budget I'll eat less sweets, which is okay anyway, lol.

    1. I'll have to read that book. The doc told me to stay away from dairy and I am a butter 'nut'.....love it! I was eating popcorn for a snack as it's low calorie and inexpensive when you make it yourself. The problem was I was using lots of butter on it! So good but not good for me. I did get fed up with all the 'healthy' supposed alternatives as they didn't look so healthy to me but for the sugar and the butter I thought I would try. I did find non-dairy ice cream that is delicious and Earth Balance is all natural...no chemicals or fancy processing. It's a journey but thanks for the book recommendation!

  5. Good to hear Nitty will have another day with you! I know how hard it is when they are not eating or feeling like themselves...it is a worry. You have been busy! :)

    1. She was losing weight until I figured out she wasn't eating her dry food...Annie was. I think her teeth are not up to it so they are both getting canned food in the morning now too and eating it all! The poor girls were starving! They always got canned at night but during the day they always had the kibble if they were hungry.
      I think what's going to take Nitty is the joints/arthritis. She has a hard time getting up. I've tried putting lots of rugs down in the garage so she can get traction but eventually I think she's just not going to be able to get up and go out and that will be the end because I won't be able to keep her clean and what kind of life is that for either of us. I know it's just a matter of time but I'm not rushing it either. The ball's in Nitty's court....she'll let me know.
