Spring fever has me in it's grips!!!!

I haven't even posted I have been so busy!  Doing what you ask?  Finally doing some much needed cleaning, and clearing the old stale Winter air out of the house!  Plus, if I want to get my house up for sale I had better "get a move on"!   It's been cool then warm then cool again but I am getting stuff done so when it is finally, REALLY Spring...I can run outside and stay there (I have landscaping to get a handle on before selling house also)!  But here's one little area....my cardboard box that had all my picture hanging paraphernalia in it got dumped and pitched.  No more cardboard boxes...all plastic with lids now!

A couple things wouldn't fit in but they'll be fine...........here we are,  all ready to label and neatly tuck away on a shelf in the closet and hope I remember where the next time I need this stuff! LOL!
Before I go into MAJOR cleaning mode I ensure I have plenty of food to carry me through so I don't collapse from starvation or no sugar in my bloodstream.  So.........I thought homemade pecan rolls would be hardy fare!
And how about a nice lemon and rosemary roast chicken to carry me through the next week...........

The dark part in the rosemary which was mixed with salt and lemon rind and rubbed on the chicken which had been rubbed with olive oil.....so simple.....so good!  I think Nigella Lawson once stated that after being away from home she would come in the house and immediately put a chicken in the oven to roast.   She said until she smelled the chicken roasting she didn't really feel like she was home yet.  I paired this with some brussle sprouts...my all time favorite vegetable and some chopped up roasted potatoes with the skin left on.  I always wash all my vegetables when I get them home from the store and then when I go to use them they're ready....like the potatoes.  I just chop them up into chunks, throw them in a pan with some olive oil and seasonings of choice, toss them together and throw them into the oven with the chicken....easy peasy!  The brussle sprouts were frozen so into a pan, cover with water, bring to a boil and cook for 3 minutes although probably longer as I like mine mushy so I can mash them like potatoes.  The chicken also had a sliced lemon inside of it with fresh rosemary sprigs in case you were wondering.  Wonderfully simple, delicious meal I can enjoy for days to come when I'm exhausted from too much cleaning! LOL!
The weather people said there was a comet in the Western sky to look for at about sunset so out I went and look what I saw!  Was it a jet stream or a comet?  It was the only one out there so I'm taking it as the comet!  It's my story and my picture.  Oh, it's the little pink streak in the sky there, in case you were wondering.
I finished a book too although actually I've been staying up later with "projects" and falling into bed so tired I haven't been reading as much.
Knit Lit is a compilation of knitting essays that ran the gamut from wise old knitters to young ones to people that didn't even knit but wrote about knitters they knew and loved.  Great writing and I'm hoping there is more "Knit Lit" out there!  This will count as one of my book club reads but I am behind in every group I belong too so who's counting?
Oh, did you ask about Maggie, my little bunny girl?  I have done little...one gal who got a kit the same time I did has her "practice" one done and is now working on her "kit" one....not a bad idea as the Liberty fabric in the kit is too pretty to mess up!  But I did get a little done....very little..........I copied and cut out the patterns! LOL!
Actually, I have cut her out too but I didn't take a picture of that. 
 My socks...you ask me about my sock knitting?  Well, I was almost done with the second sock of the second pair when I needed to measure.  I tried the first one on and it was too small!!!!  Dang!  Then I couldn't find my knitting counter and tape measure...in fact I couldn't find ANY tape measure in the house and I know I have at least 3!!!  Finally, I found it several days later and then I couldn't find the pattern!  AHHHHHHHHHH!!!!!!!  But...this is what happens when I clean and organize....I should be used to it....I cannot find anything!  Why do I torture myself this way by cleaning I ask you!?!?!?  Because I want to sell my house and move to my final resting place where I can relax and never clean again.  Did I just say that?  Now there's some major motivation!  LOL!  Actually, I love a clean, well-organized and decorated home....I've just never had one! LOL!  TTYL!  Hugs to all!

Spring in so many ways...........

Oh!  I have so much STUFF but I did end up with a full garbage when I was done too so that made me feel like I made some progress!

I know this is blurry but I had to share this with you....these are photos in a clothing catalog I got in the mail today.    Those are REAL women...they look like people from a concentration camp!  I had never realized what a bad image these magazines give to young women.  No wonder they're anorexic!  It's terrible....the models in the picture look ill and their cheeks are sunken.  They must have rounded up all the anorexic women they could find for these pictures.  I was sick once when I was a young mother and I went down to 80 pounds and I looked terrible!  Since when did this become "attractive"?  I noticed the male models looked "normal".....what is wrong with young women today?  Is this what I marched for in the days of "women's lib"?  So sad! 
I finished my cross stitch and washed and ironed it and was going to sew it....this is what started the whole Spring cleaning thing......does that ever happen to you?  We'll see how long it is before I actually get it sewn up! LOL!
It was a productive day but now..........we're tired.......

Tuesday Tips!

These tips I share are more about being frugal or scaling back if need be.  I've found it seems you either have time or money and few of us have both.  I grew up with the dictum "Use it up, make it do, throw it out or buy it new" and in that order.
Here are some tips I hope you can use.

Tip #1 - I've read many places that recommend putting your candles in the freezer to get out the last bits of wax when your candle is used up.  I find that putting mine in hot soapy dish water makes the left over wax much more pliable to remove safely and easily.

Tip #2 - I've found the most reasonable and nicely scented candles to be the ones at Wal-Mart here in the U.S.  They're about $5.00 for a big one, a nice variety of scents, burn clean and scent the room.  The bonus is they have lids and I can use the containers for other things after the candle is finished.


Tip #3 -  I bought this wick trimmer years ago and I don't know what I ever did without it.  One of the secrets of keeping your candles from  "smoking" is to always trim your wick before you light it.  Before I had my "wick trimmer" I used to grab a kleenix and grab the wick and turn  and the burnt part would come off leaving about 1/4 inch of wick remaining.

YOP Update and more.....

Don't let Spring fool you!  We've had the coldest weather yet and I can't believe these daffodils survived the ice storm we had!
Meanwhile, I stopped watching television while knitting and it's amazing what progress I'm making!  Who knew?  Almost done with my second sock of my second pair.  I only had 1 pair on my YOP list but I think I will always have a pair of socks on my needles from now on.  I must admit though, I think I know why people use the multi-colored and self-striping......because solid colors,  especially light ones, show every  little snag and stitch that's not perfect!  My next pair will be multi-colored/patterned for sure! LOL!

I had to throw in a bit of greenery although this "Holly" (I think it's holly?) looks like this year round.  I'm getting Spring Fever down here in Arkansas.
I need to make some cookies today too, oatmeal crisps from Pioneer Woman.  they are her husband's favorites and  mine too!  I love the fact that they're refrigerator so I make 2 rolls and freeze one for another time.  Meanwhile, I've added a few new colors to the Blackberry Salad blanket.  Now this project is great for watching t.v.!  Another reason to have multiple projects going at once! LOL!

I think I only had 1 or 2 potholders on my list too but these are great for in between projects when you just have to have something to work on but you're too tired to start putting another project together.  Again, I think I will always have these going and/or washcloths for a quick, "grabable" project which also travels well as they're small.  See the Burpee seed catalog there under the crochet book?  I can't help it!  I have so many projects going and now it's time to garden too!  Oh my!  I love all my projects....what's a gal to do?
 If you read my last blog posting, I also have bunnies coming to sew.  Well, just one actually but you know what they say about bunnies.  I know there will be way more than one bunny in my future!  
I also finished my cross stitch and washed it to dissolve the waste canvas and it is hanging to dry before I sew it up into a little purse.
I've been doing a little Spring Cleaning.  Cleaning my house is a little like going on an archaeological dig....you never know what you might "unearth"! LOL! In this case it was my first knitting project which never got finished! It was a Lion Brand kit for a scarf.
Another project that's not on my YOP list.  I think I'll unravel and save it for another day as I don't think it would match my knitting.  I'm hoping I'm a better knitter now.
 By next week I am sure to have several of the above projects wrapped up and onto a few new ones that ARE on my YOP list!  Wishing you a wonderful day and week ahead!

Look what's on it's way to me!!!!

This is Miss Maggie Rabbit being sold in kit form or pattern over at Posie Gets Cozy and they are getting sold out so run, don't walk!  I logged on early this  morning in anticipation and bought the following color combination which is already "sold out"!  Her stuff goes fast!  But don't worry, there are still some gorgeous color combinations to chose from or get the pattern and do your own.  I ordered the kit and some supplies.  I am SO excited and I can't wait to get it!!!!

Isn't she just adorable????  I love bunnies and although I was never into dolls when I was a child, now that I'm an adult, I absolutely adore animals dressed like people.  Similar to the tales and illustrations of Beatrix Potter and Peter Rabbit.....




Alicia Paulson of  Posie Gets Cozy stated she is not stopping with the one outfit either!  There will be boy outfits and more clothes for Miss Maggie too!  She's already made a darling knitted pinafore. I plan on making an entire family!  Oh, we need Grandma and Grandpa outfits too, Alicia, if you're listening! LOL!  I'm so excited!  I will keep you informed every step along the way as I build my own little world of Beatrix Bunnies!  Let's see, they'll need beds and linens and accessories and pajamas and robes and slippers and books to read and ...........

KAL for socks!

Whoa Nellie, what a week so far but I can't complain....it's piddly stuff but it has left me tired and behind.
I'm on my second sock....you guys have all probably knit 8 pair by now but.....I'll catch up....someday.
This second sock got frogged 4 times.....okay, so I guess I can't watch t.v. and knit......yet.
But now that I knit like a monk in total silence with my chair facing the wall and with blinders on, I'm doing pretty well.  I'm on STEP #3 of 6 or 7 if you count the fancy weave to even out the top of the cuff at the end.

 here's the right side....amazing!  I now know the difference between the two!!!!

As the gal in my Very Pink video states..."I told you the foot was a weird body part to knit for".  I didn't mention to her that there might be a few others.
Meanwhile, I've been reading the loveliest book of essays on knitting called "Knit Lit" which I thought I would share with you since I am sure you are SO tired of looking at my same old sock(s)....thank goodness we only have 2 feet or you'd REALLY be sick of my pictures.  
My friend Sue, the book fairy, gave this to me and I think this might be the second time I'm reading it I so enjoy it.  Is it wrong to photograph a knitting book on a crocheted background?

Tuesday Tips!

Tip #1 - Use empty kleenix boxes to store your plastic bags and you can pull them out one at a time!

Tip #2 - I know you've all seen cup hooks used for cups but they have many more uses.........

 I put cup hooks under my laundry room cupboard to hang empty ice cream containers filled with items that took up too much valuable cupboard space.
 Tip #3 - How often do you go about unplugging one appliance so you can plug in another in your kitchen?  I was doing that a lot until I found these handy devices at the local Wal-Mart for cheap!  They have several different models but this one suited my needs.  Now, no unplugging!  Today I ironed and I did not have to unplug anything...well, except the iron when I was done.

I hope these tips help make your life easier in some way.  Let's face it, we could all use easier!  Have a great night!

1.  Cake or cookies?  It depends but I'd say I'm pretty much a cookie gal but "crispy" cookies.

Cooked up a "Q" storm................

While it rained and sleeted outside during the storm the other day,  I ran around the house trying to get as much done using electricity as I could.  I was so sure we would lose power it was like "a race against time"!  I got caught up with laundry, I got all the dishes washed and started cooking and baking. 
DISCLAIMER:  These recipes I am going to share with you are not quick, easy, or calorie free.....but boy are they ever delicious!
The first recipe I got from Alicia Paulson's blog .  She and her husband Andy shared this for Valentine's Day.  It would have to be a special occasion because it takes forever to make.  First of all, make the sauces the day before and REALLY prep for this recipe ahead of time otherwise it will be midnight before you serve it!  That aside....it is SO worth it and heats up wonderfully in the microwave for leftovers. 
Alicia's picture was better and they had cute individual oblong casserole dishes they cooked it in.  Moi just had regular 9" square casserole dish...vintage Corning Ware! LOL!  Regardless, it was marvelous and the juices are so good you could put them over ice cream and you would love it.  I can't say enough about this very special dish.

Lasagnas Rozale
Our version of these, from Martha Stewart
Serves 2
For the sauce:
8 oz. mushrooms, chopped
2 t. olive oil
2 t. butter
1 carrot, finely chopped
1 celery stalk, finely chopped
1 small onion, peeled and finely chopped
1 clove garlic, peeled and finely chopped
3 oz. lean ground beef
3 oz. ground pork
3 oz. Italian sausage
Salt and pepper
1/2 c. red wine
12 oz. chopped tomatoes (boxed or canned)
2 c. chicken stock
1/4 t. nutmeg
For the bechamel sauce:
2 T. butter
2 T. flour
1 c. plus 3 tablespoons milk
1/4 t. salt
1/4 t. nutmeg
Other ingredients:
6 lasagna noodles
10 oz. frozen spinach, thawed and drained
3/4 c. freshly grated Parmesan
To make the sauce:
1. In large skillet, heat olive oil and butter over medium-low heat. Add mushrooms and cook, stirring occasionally, until they are soft and have let off their liquid, about 5 minutes. Add carrot, celery, onion, and garlic; cook, stirring occasionally, until onions are translucent, 3 to 4 more minutes.
2. Meanwhile, in separate skillet, break up and brown all meats over high heat, stirring occasionally, about 4 minutes. Add 1/2 t. salt and 1/8 t. pepper. Drain off fat and add meats to skillet containing vegetables; mix everything together. Add wine and cook until liquid has evaporated, about 2 minutes. Stir in tomatoes, stock, and nutmeg. Lower heat to medium low and slowly simmer, stirring occasionally, about 35 minutes. Much of the liquid will evaporate but sauce will remain very moist. It can be made 2 days in advance and stored in refrigerator. You will have extra sauce after lasagnas are assembled to use over pasta, etc., for lunch the next day, too.
To make the bechamel:
1. In a saucepan, melt 2 T. butter over medium-low heat. Add flour and cook, stirring frequently, 5 to 6 minutes.
2. Meanwhile, in a small saucepan, bring milk and salt to a boil. Slowly whisk the milk into the flour mixture until completely incorporated and smooth. Add the nutmeg and reduce heat to low; simmer, stirring occasionally, until thickened, about 2 to 3 minutes. Remove from heat.
To assemble the lasagna:
1. Boil lasagna noodles in large pot of salted water until about a minute before you normally like them to come out. Drain and rinse with cold water, then cut (shorten) to fit two 12-ounce individual ovenproof casserole dishes.
2. Heat a medium skillet over medium-high heat; add spinach and a pinch of salt and pepper. Cook, stirring, until wilted and tender. Remove from heat and drain in a colander. Set aside.
3. Heat oven to 375 degrees. Spread 5 T. meat sauce into each of the casserole dishes. Cover with 1 lasagna noodle and spread 5 T. meat sauce evenly over. Spread 2 T. bechamel over the meat sauce and evenly distribute 2 T. chopped spinach over the bechamel. Sprinkle with Parmesan and cover with 1 lasagna noodle. Repeat layering process. Spread 1 heaping tablespoon of Parmesan and dot with butter.
4. Bake until tops of lasagnas are golden and juices are bubbling, about 20 to 25 minutes. If the tops are not yet brown, increase heat to broil and place lasagnas under broiler until tops are speckled brown. Let stand 10 minutes; serve with red wine, simple salad, crusty bread, fancy deserts, and lots of love. Xoxoxoxoxoxoxo

For dessert, I had picked up some Spring Strawberries and decided to make strawberry shortcake.  Many times I use angel food cake and that's good but I decided to try to make shortcake from scratch using Nigella Lawson's recipe and it did not disappoint!  I like these better than scones and they are good enough to have naked with a cup of tea.   No!  I'm not naked, the shortcake!  As in nothing on the shortcake!
Again, this is not a quick, easy or low cal dessert but you will get immense pleasure from eating it!
Don't worry, I don't expect you to try and read this.  I will give you the recipe below.

For the shortcakes:
2 cups plus 2 tablespoons flour
1/2 teaspoon salt
1 tablespoon baking powder
5 tablespoons sugar but save 2 of the 5 for later
1/2 cup unsalted butter, frozen
1 large egg, beaten
1/2 cup light cream (I used whole milk as I didn't have any cream)
1 large egg white, lightly beaten
1 baking sheet, greased or lined with parchment or wax paper
2 1/2 inch round cutter (I used a glass)


 




For the filling:
approximately 11 ounces strawberries
1 tablespoon sugar
few drops of Balsamic vinegar (I used strawberry champagne vinegar...I have no idea where that came from?  I usually have Balsamic but someone put the empty bottle back in the cupboard!  Now who on earth would do such a thing????)
1 cup heavy cream, whipped or creme fraiche ( I live alone so I use the canned Ready Whip, it's fresh whipped cream that doesn't get watery after a day like when I whip a carton of whipping cream)
 

 Preheat the oven to 425 degrees F
Mix the flour, salt, baking powder, and 3 tablespoons of the sugar in a bowl.  Grate the butter into these dry ingredients and use your fingertips to finish crumbling the butter into the flour.  Whisk the egg into the light cream, and pour into the flour mixture a little at a time, using a fork to mix.  You may not need all of the eggy cream to make the dough come together, so go cautiously.
Turn the dough out onto a lightly floured surface, and roll gently to a thickness of about a 1/4 inch.  Dip the cutter in flour and cut out as many rounds as you can.  Work the scraps back into a dough, re-roll and finish cutting out.  You should get 8 in all.  Place the shortcakes about 1 inch apart on the baking sheet, brush the tops with the egg white, and sprinkle them with the remaining 2 tablespoons of sugar.  If it helps with the rest of your cooking, or life in general, you can cover and refrigerate them now for up to 2 hours.
Bake for 10-15 minutes, until golden brown, and let them cool for a short while on a wire rack.
Meanwhile, crush half the strawberries with the spoonful of sugar and the few drops of Balsamic vinegar if using, and halve or quarter the remaining berries, depending on their size.  Whip the heavy cream if you're using.  
The shortcakes should be eaten while still warm, so split each one across the middle and cover with a spoonful of the crushed strawberry mixture, a few halved or quartered strawberries, then dollop some whipped cream or creme fraiche on top and set the top back on.  Makes 8
