Still cooking Easter dinner...........but Happy Easter to all of you!!!!

I did a little bit of everything today...weeded some outside before the storm came through then cleaned up the kitchen and got to work on my Easter feast.  There were a few calls so I am a little late with dinner but it is on it's way and the work is done so I can kick back and enjoy the rest of my day.
I tried some natural dyeing of eggs until I realized all my eggs were brown ones except 2! LOL!
But I had some beet juice left from some beets so I tried that.......the eggs on the left are not dyed but the 2 on the right are....not bad.  I didn't have any blueberries nor would I waste them on coloring eggs! LOL!  You can also use red onion skins and yellow onion skins and spinach but I had a meal to cook so this was good enough for me...maybe next year.  We had a nice storm and it came down REALLY hard for awhile so it was a good test of the roof and so far so good!  Hallelujah!
My dinner this evening will be broccoli and corn casserole............(not cooked yet)
sweet potato souffle (also not cooked yet)..........

and a luscious spiral cut smoked ham to which I am basting with a peach mustard glaze...........it is a Petit Jean ham from here in Arkansas and they are famous for their smoked meats.....my mouth is watering!  I always cook a big one as I use leftover ham is so many dishes.
 I was going to make a lemon meringue pie (my favorite) but I think I will be full enough so maybe tomorrow I'll make the pie.  I wish you were all here to share it with me.....the best blogging friends a gal could have!  I have so much to be grateful for and my blessings are many so Glory be to God or whoever you pray to and "may your cup runneth over"!

  1. It looks like a wonderful feast! You cook so well for yourself. It always impresses me. We went to a friends for dinner where we had scalloped potatoes with ham and I took a green salad. It was yummy and the company wonderful.

    1. It was delicious, I must admit...I can follow recipes very well! LOL! I have to stay in practice as when I move back North the kids have informed me they will be at my table for every holiday! And I informed them they will be cooking right along side me! LOL!

  2. Oh boy, I wish I was there to share you feast, too. My mouth is watering just reading and seeing the pictures. We had a quiet Easter after church. Last night we celebrated oldest son's 28th birthday by stuffing ourselves at an eatery in the city (Indy) so today it's popcorn for supper. lol My mouth is watering just thinking of the yummy ways you're going to use up the ham. Ham is a gift from heaven food. :)

    1. I'm from your Mother's generation where the holidays were celebrated and food was love! It still is...that's why I'm always surprised that some people are surprised that I cook nice meals for myself....I love myself too! I deserve it! You cook beautiful meals for your family and like I tell my children....it's your family and you get to do things your way!

  4. Happy Easter to you too! :) Your ham looks so delicious! I love your Corningware...is that what it is? Anyway, hard to find these days. I keep looking for some at thrift stores. I think you should have made the pie, or definitely make it tomorrow!!! I was going to dye eggs too but then I realized I froze them all and crushed up the shells for my garden...bad planning!

    1. Yes, it was my Mother's corningware that was left to me. I was too tired to make the pie really and the dinner was great and I was plenty full afterwards! The sweet potato souffle was like a dessert anyway. I didn't know you could freeze eggs! I learn something every day from my blogging friends! Talk about bad planning....I was the one who got brown eggs! LOL!

  6. Glad to hear the roof is good. I used turmeric to dye a few eggs a light golden color. Otherwise, it was a quiet day. We've not seen the sun in over a week so just kind of dreary and blah over here. Have a good week.

    1. I forgot about the Turmeric and I even got it out of the cupboard...oh well, with only 2 white eggs I was getting no where fast! LOL! It's gloomy here today but I just close the curtains and light some candles...great weather for some crafty pursuits!
