More of everything......


I made some yummy dishes yesterday...........you probably can't tell what it is so I'll tell you...............


Outback Steakhouse Alice Spring's Chicken
Recipe: 

4 boneless skinless chicken breasts    
pounded to 1/2 inch thickness
Lowry's Seasoning Salt  (go easy on this as I thought it was a little salty so use sparingly)
6 bacon slices
1/4 cup regular mustard (I only had Dijon but it worked fine)
1/3 cup honey
2 Tbsp. Mayonnaise
2 teaspoons dried onion flakes
1 cup sliced fresh mushroom
2 cup shredded Colby/Jack cheese
First, Sprinkle and rub the chicken breasts with seasoning salt. Cover and refrigerate for 30 minutes. (I actually left it in the frig longer than that)
While the chicken is in the refrigerator, cook bacon in a large skillet until crisp. Remove bacon and set aside. ***Do not discard grease.***
Saute chicken in the bacon grease for 3 to 5 minutes per side, or until browned. Place chicken in a 9" × 13" casserole dish or pan.
To make the Honey Mustard: In a small bowl, mix the mustard, honey, mayonnaise and dried onion flakes. 
Spread some of the Honey Mustard over each piece of chicken, then layer with mushrooms, crumbled bacon, and shredded cheese.
Bake in a 350° oven for 30 minutes, or until cheese is melted and chicken is done.
Serve with the left over Honey Mustard Sauce that you made

This is not healthy and I'm not used to so many processed foods.  I love the idea but I may have to redo the recipe to make it more pure and natural but for now I will enjoy it as is.  I did not make mine fancy like their picture.

 Can anyone identify this bird?  I know it's a terrible picture but it was the best I could do. This bird sings it's little heart out every Spring and it has such beautiful songs and what a variety!  It seems to be pale with speckles but that's the most I can make out and I used my zoom lense.

 I finally finished this audio tape.  I think the book would be better.  It takes concentration for all the twists and turns and the British accent can sometimes be hard to understand.

This was my non-fiction but it is an action plan and will take a while to finish as each chapter requires you to do things so while I am still reading and doing the "action plan" I have chosen another non-fiction
book to read...........The author, Jo Packham is also the woman that writes/edits? the Where Women Create magazines and I love those so hopefully I will learn some good tips from this book. 
I got a bunch of National Geographic magazines free from a library sale awhile ago and I am starting to read them....first one...........I love these magazines!
I'm not sure that I will participate in the Dewey Readathon but just in case I dug up some books that I would like to read coming up..........I'm almost done with Death of a Witness by P.D.James so next will either be Harry Potter Book #1 (I had these books but must have loaned them and I know I read at least the first 3 so I'm starting over)...the only book I found was this one..........
Sue, the book fairy gave me the first 3 books in this series which I am looking forward to........

 
 
As for handwork........I'm almost done with the heel flap on sock #2..........
and my next crochet project is going to be this little number (although it's actually fairly large).......

They have loads of wonderful free patterns with that U.K. flair that I love!

"Singin' in the rain"............

I mowed yesterday because rain was coming and it did.  Just a nice gentle rain and now the sun is out but more rain is coming tomorrow.  I had to cancel my twice a year doctor appointment (I only go so they'll refill my prescriptions) because tomorrow there might be storms and I won't drive through those hills for over an hour one way.  Who needs that?  I just cancel and reschedule until we can convene on a sunny, dry day! LOL!
I finished all the crocheting for the hooky pillow and did my first button hole....so easy!  Now I just have to sew it together which will be the tricky part for me.
 Did I tell you I "rigged up" a clothesline away from the tick infested cedar trees so I can hang my clothes out!  Yay!  I missed it so!  Determination is a great motivator!  It's a sad clothesline but it works!
See all the dead trees back there?  That's the telephone company.....they spray now and kill off things under the power line and then they all fall in my yard and I have to lug them out to my burn pile and burn them.  I can see why older people get condos. Plus, the water department dug up 2 spots in my yard and the ruts from the gas truck all contributed to a rough ride on the mower yesterday.  But a hot bath last night and I was good to go again this morning!  Thank you, Lord!
I finished book #3 by Jacqueline Winspear but need to order some more.  It was good per usual! 
I started reading this book by P.D. James who I have always wanted to read but I am very disappointed...........it's dry and slow and I will finish it and maybe by then I will have changed my mind but so far not so thrilled. 
I need to pick out another non-fiction too.  BTW, this coming weekend is the Dewey 24 Hour Readathon 
I thought of doing it and I may still but I have to read their site more.  I don't think it would be healthy for me to sit and read for 24 hours straight or anyone for that matter!  But it always sounds like so much fun and they make treats and gather snacks and get everything ready and choose their books.  It does sound like fun to just sit all day?  But, I would probably not be able to move after sitting that long and what a strain on my eyes!  We'll see but I would need to order books too....mercy!  Anyway, check it out!  I know several people that absolutely wouldn't miss it!  I may have to give it a go.
My clemaitis are blooming...well this one is and the other one (different) has buds.  I always wanted a deep purple clemaitis and she's a winner!

YOP Sunday

This will be a quick update and there's not much to it really.  I've only worked on 2 things this week.........I finished the front of the "Happy Hooky" pillow.........
and part of the back.  The back is 2 sections with a 3 button closure that overlaps in the back.  I have one section almost done so by next week I would like to have it finished, blocked and stuffed with a pillow form.  I hope there will be a standard one that will fit it.
I also worked on my 2nd sock.............almost done with the leg.........
Podcasts I watched this week were Susan B. Anderson (knitting and spinning), Cherry Heart (crochet & knitting), Inside Number 23 (knitting and sewing) and I just started watching Homespun House which is knitting.  No progress on sewing or cross stitch and embroidery. 
Today I went and got gas for the mower and also blueberries to make my dogs some homemade treats.  Nitty is allergic to wheat and beef so I make them several different kinds...this one is blueberry ......
Here's the recipe...........

Ingredients

·         1 1/2 cups oat flour
·         2 1/2 cups quinoa flour
·         3/4 cup flax meal
·         1/2 cup frozen, organic, unsweetened blueberries
·         1/4 cup olive oil
·         1 large egg

Directions

1.      Preheat oven to 350 degrees. Line a baking sheet with a nonstick baking mat or parchment paper; set aside.
2.      In a large bowl, mix together all ingredients with 1 cup water to form a dough. Roll out mixture between two sheets of plastic wrap to 1/4-inch thick; remove plastic wrap and cut out biscuits with a 3 1/2-inch bone-shaped cookie cutter. Reroll scraps and continue cutting out biscuits.
3.      Space biscuits 1 inch apart on prepared baking sheet. Bake for 30 minutes until nicely browned and firm.
4.      Transfer biscuits to a wire rack. Turn off oven and place biscuits on wire rack in oven overnight. Remove from oven and store in an airtight container up to 2 weeks.



It calls for some unusual flours but I was able to get them on Amazon.  They've lasted a long time.
