Great Sunday yesterday!








Oh, it was a great day here at the homestead....just one of those days where everything flows and it was cozy and warm and well, I just don't know how to describe it but suffice it to say it was very satisfying! I changed the sheets, did laundry, took a nice hot bath in the a.m. to get the joints going, had a fire in the fireplace and made peanut butter cookies....the smells and the warmth of the kitchen and the fireplace just added up to a great day! Here's the recipe for the peanut butter cookies...an old one from my Mother's BH&G's cookbook that I would have to say are my very favorite cookies. WARNING: I like crispy cookies and the browner the better so adjust to your own taste when baking. These are by no means SOFT cookies but so full of butter they fall apart in your mouth....crispy, not hard.

PEANUT BUTTER COOKIES:

1/2 cup butter
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1/2 tsp. vanilla
1 1/4 cups flour
3/4 tsp. baking soda
1/4 tsp. salt

Thoroughly cream butter, peanut butter, sugars, egg, and vanilla. Sift together dry ingredients; blend into creamed mixture. Shape into 1 inch balls; roll in granulated sugar. Place 2 inches apart on ungreased cookie sheet. Crisscross with fork tines dipped in the sugar (otherwise your fork will stick to the cookie!). Bake at 375 10-12 minutes. Cool slightly and remove from pan. Makes about 4 dozen and takes about 2 hours start to finish. I think if you wanted a softer cookie you could bake it at 350 for about 9 minutes but I never do! LOL! I like mine almost burnt! Happy baking and I hope you enjoy! They are DELISH!

  2. Yummy!! The cookies look great. I like them crispy too and brown---none of the pasty white kind for me. LOL Seems like you had a nice pleasant day. MB
